Recipe: Mississippi Mud Cake

Yield: 15 servings.
For cake:
2 (about 19.5-ounce) packages brownie mix, prepared according to
package directions
1 1/2 cups coarsely chopped pecans, toasted
1 (10.5-ounce) bag miniature marshmallows
For frosting:
1 (1-pound) package powdered sugar, sifted
1/2 cup milk
1/4 cup ( 1/2 stick) butter, softened
1/3 cup unsweetened cocoa powder
Step 1: Grease and flour a 15-by-10-inch jellyroll pan. Preheat the
oven to 350 degrees.
Step 2: Prepare brownie mix according to package instructions. Stir
chopped pecans into batter. Pour batter into prepared pan. Bake for
30 minutes. Remove from oven; top warm cake evenly with marshmallows.
Return to the oven; bake 5 minutes.
Step 3: Shortly before cake is done, prepare frosting. Combine
powdered sugar, milk, butter and cocoa powder in a medium bowl. Beat
at medium speed with an electric mixer until smooth. Drizzle frosting
over warm marshmallow-topped cake. Let cool completely before serving.
