Mississippi Mud Cake with Icing
CAKE:
2 sticks butter
4 eggs
1 tsp vanilla
1/3 cup cocoa
2 cups sugar
1 1/2 cups flour
1 cup chopped pecans
1 package miniature marshmallows
ICING:
1 box powdered sugar, sifted
1/3 cup milk
1 tsp vanilla
1/3 cup cocoa
1 stick softened butter
Grease a 9x11 pan. Cream butter, add eggs and vanilla. Sift cocoa,
sugar, flour and salt and add to creamed mixture. Mix well and add
nuts. This will be a thick mixture and you have to spread it into the
pan. Bake at 350° for about 45 minutes. Remove cake from oven and place
one whole package of miniature marshmallows on top of cake and put back
into oven until brown.
ICING: Combine powdered sugar, milk, vanilla, cocoa and butter and mix
well. When cake is cool, put icing on top.
