Recipe: Mississippi Mud Pie

Title: Mississippi Mud Pie

1 1/2 c Sifted confectioners sugar
1/3 c Butter
1/2 c Heavy cream
3 (3 oz.) Baker's unsweetened
Baking chocolate flavor
3 tb Light corn syrup
Dash of salt
1 tb Vanilla extract
1 9-in deep dish pie shell,
Baked
1 c Chopped pecans, divided
3 c Coffee ice cream, softened;
Divided
Whipped cream
In saucepan, combine first six ingredients. Stir constantly over low
heat until mixture is smooth. Stir in vanilla extract. Cool to
room temp. Spread 1/2 c. sauce on bottom of pie shell. Sprinkle with
1/4 c. nuts. Freeze 10 min. Spread 1 c. ice cream over
sauce-nut layer. Freeze 20 min. Repeat sauce-nut/freeze, ice
cream/freeze procedure twice more. Garnish with whipped cream.
Drizzle remaining sauce on top; sprinkle with nuts. Freeze.
(Wrap well in aluminum foil; may be frozen 1 week.) Makes 1 9-in. pie.
