Recipe: Quick Tomato Sauce

1 tablespoon butter
1 tablespoon flour
1 cup tomato sauce
1 green onion
1 slice green pepper
1 stick cinnamon
1 cloves garlic
Zest of 1/4 lemon
Sugar and salt -- to taste
In a small, heavy-bottomed saucepan over medium heat, melt butter. With a wooden spoon stir in flour until mixture is bubbly and lightly browned (about 3 minutes). Add the remaining ingredients and bring to a boil. Reduce heat and simmer, stirring occasionally, until flavors are blended (10 to 15 minutes).
