Recipe: Smoked Sausage And Corn Chowder

Smoked Sausage and Corn Chowder
8-12 ounces fully-cooked, smoked beef sausage, cut into 1/2-inch thick slices
1 cup sliced green onions
2 teaspoons vegetable oil
2 14 1/2-ounce cans vegetable broth
1 13 1/4- to 15-ounce can cream-style corn
1/8 teaspoon ground red pepper
1/2 cup heavy cream
In large saucepan, cook onions in oil over medium heat 3-4 minutes or
until tender. Stir in sausage, broth potatoes, corn and red pepper.
Bring to boil; reduce heat to low. Simmer, uncovered, 20 minutes.
Stir in cream; heat through. Garnish with additional sliced green
onion, if desired. Makes 4 servings.
