Weight Watchers Diet Cola Chicken ----
4 Boneless, Skinless Chicken Breasts
1 can (12 oz.) Diet Coke (Coke seems to work better than Pepsi)
1 Cup Ketchup
Few drops of "Liquid Smoke" (optional)
Garlic (optional)
- Brown chicken breasts over medium heat
- Add Diet Coke & Ketchup
- Add Garlic to taste
- Reduce to simmer
- Continue to simmer until "sauce" thickens. Typically about 45 minutes to an hour. The longer you cook it, the thicker the sauce becomes.

Options:
- Use any variety of the Heinz Kickers Ketchups for part or all of the regular ketchup.
- After simmering all ingredients for 15-20 minutes or so, remove chicken from pan and shred it using 2 forks (some call this "pulling it"). Return to pan and continue to simmer until "sauce" thickens. Serve on Low Fat Buns for BBQ Chicken sandwiches.
