Yeast Bread Tips

Choose a warm, draft-free spot to place rising dough; a gas oven lit only by a pilot light is ideal.

When using plastic wrap to cover dough as it rises, spray wrap with nonstick cooking spray.

Cover the dough, sprayed side down to avoid sticking.

To test whether dough has risen sufficiently, poke two fingers into the dough.

If it pops back right away, the dough is ready.

When dough has doubled in bulk, which should take about an hour, make a fist and punch it down to work out air and return dough to its original, unleavened size.

Now it's ready for the second rising!
