Recipe: 6 Minute Tomato Orange Soup

1 teaspoon olive oil
1 onion, chopped
1 crushed garlic clove
28-ounce (796mL) can tomatoes, including juice
10-ounce (284mL) can undiluted chicken broth
Finely grated peel and juice of 1 orange
1 teaspoon each of ground cumin and granulated sugar
Generous grinding of black pepper
1 cup crumbled feta cheese (optional)

Place oil, onion and garlic in a 12-cup (3L) microwave-safe bowl.
Microwave, uncovered, on high for 1 minute, until onion is soft. Add
remaining ingredients, except feta, to bowl. Break up tomatoes with a
fork. Microwave, covered, on high for 5 minutes, to heat and blend
flavors. Turn into a food processor and purée until fairly smooth.
Sprinkle with crumbled feta.

Makes 6 one-cup servings.
