Adobo Pork Chops Diabetic

Ingredients:

6 boneless pork top loin chops, cut 3/4 inch thick
2 tbsp packed brown sugar
2 tbsp olive oil
2 tbsp orange juice
2 tbsp snipped fresh cilantro
1 tbsp red wine vinegar or cider vinegar
2 tsp chili powder
1 tsp ground cumin
1 tsp dried oregano, crushed
1/4 tsp cayenne pepper (optional)
1/4 tsp ground cinnamon
3 cloves garlic, minced

Directions:

Place chops in re-sealable plastic bag set in a shallow dish. Combine
sugar, oil, juice, cilantro, vinegar, chili powder, cumin, oregano,
pepper (if using), cinnamon, garlic, and 1/2 tsp salt. Pour over chops
and seal bag, turn to coat. Marinate in refrigerator for 2 to 24 hours.

Drain chops, discard marinade. Grill on rack of an uncovered grill
directly over medium coals for 12 to 15 minutes or to medium (160
degrees F), turning once.

Makes 6 Servings.
