Recipe: Anjou Salsa

4 cups chopped peeled Anjou pear (about 2 pounds)
1/4 cup chopped red onion
2 tablespoons fresh mint, chopped, or 2 teaspoons dried mint
Pinch of grated lime rind
2 tablespoons fresh lime juice
Pinch of sugar
1/2 teaspoon freshly ground black pepper
1 jalapeno pepper, seeded and chopped, or to taste
Mix pears with red onion and mint. Combine with other ingredients. Cover and
chill.
