Recipe: Apricot Sauce

1 orange
3/4 cup apricot preserves
1/2 cup apple juice
PREPARATION AND COOKING:
Grate 1 teaspoon of orange zest into a medium saucepan. Stir in the
preserves and apple juice and bring to a boil. Reduce heat and simmer
until slightly thickened, about 10 minutes. Serve warm.
Yields: 3/4 cup
