Recipe: Baked White Fish

8 ounces whitefish - 4 ounces per person
1/4 cup olive oil
2 stalks celery or fennel bulb
-use smaller inner stalks
1/2 yellow onion
1 tomato -- unpeeled
1/4 cup grated Parmesan cheese
1/2 cup white wine
Sea salt
Fresh ground black pepper
1 lemon -- quartered
Preheat oven to 400°F. Lay fish in an oven dish and dribble oil over fish.
With a chef's knife coarsely chop celery and onion and place both around
fish in dish. Slice tomato into dish over fish; sprinkle cheese over fish
and vegetables. Place dish in preheated oven and cook 5 minutes. Pour wine
into bottom of dish and baste fish; season to taste.
Return dish to oven, cook 5-6 minutes, and baste again. Fish should flake
when done. Garnish with quartered lemon and serve.
