Recipe: Canton Chinese Chicken Wings

Chicken wings (amount needed)
For each pound of wings use:
4 tablespoons soy sauce
3 tablespoons sherry or dry white wine
1 teaspoon vinegar
2 tablespoons honey (big)
2 scallions -- minced
1 large clove garlic -- minced
1/4 teaspoon cayenne pepper
1 teaspoon ground ginger
Oil for frying
Cut wings at joints and discard tips. Brown wings in hot oil; drain. Blend remaining ingredients together in a bowl. Pour over wings in skillet. Cover and simmer for 30 minutes (until wings are tender.)
