Recipe: Chicken Jalapeno Dip

1 boneless skinless chicken breast -- poached and
diced
12 ounces cream cheese -- softened
2 jalapeno pepper -- seeded and minced
3 tablespoons red onion -- chopped
2 cloves garlic -- minced
1 teaspoon ground cumin
1 teaspoon chili powder
1 1/2 cups Monterey jack cheese -- grated
salt -- to taste
pepper -- to taste
Combine all ingredients in a large mixing bowl and beat with an electric
mixer until well blended.
Transfer to a chafing dish and serve with tortilla chips.
