Recipe: Chinese Green Beanswith Sesame Seeds

CHINESE GREEN BEANSWITH SESAME SEEDS
8 oz. Chinese long beans (or other green beans), trimmed and cut into 6-inch
pieces
1 tbsp. peanut oil
1 tbsp. soy sauce
1 tsp. sesame oil
1 tsp. rice vinegar
1 clove garlic, crushed
1 tbsp. toasted sesame seeds
Place beans in a steamer basket. Steam beans, covered, over boiling water
for 3 to 5 minutes, or until crisp-tender. Immerse in ice water to stop
cooking process. Drain and pat dry. In a medium bowl, whisk together peanut
oil, soy sauce, sesame oil, vinegar and garlic. Add beans and sesame seeds
and toss to coat. Marinate for 1 hour at room temperature before serving.
