Recipe: Chocolate Peppermint Trees

3 1/2 c Sifted flour
1/4 ts Salt
1 1/2 c Butter or regular
-margarine
1 c Sugar
3 Egg yolks
1 ts Vanilla
4 (1-oz.) squares
-unsweetened chocolate,
-melted and cooled
Peppermint Filling
-(recipe follows)
Sift together flour and salt; set aside.
Cream together butter and sugar in bowl until light and fluffy, using
electric mixer at medium speed. Add egg yolks and vanilla; beat well. Blend
in chocolate.
Gradually stir dry ingredients into creamed mixture, mixing well. Fir tree
design into cookie press. Place one half of the dough in cookie press at a
time, forcing dough through press, about 1" apart, on ungreased baking
sheets.
Bake in 375 degree oven 8 to 10 minutes, or until set but not browned. Cool
cookies on baking sheets 2 minutes. Remove from baking sheets; cool on
racks.
Prepare Peppermint Filling. Spread the bottom of one cookie with Peppermint
Filling. Top with another cookie to form a sandwich cookie. Fill all the
cookies. Then dip each sandwich into remaining Peppermint Filling so that
filling coats half of the cookie. Leave other half uncoated. Place on waxed
paper until coating sets. Makes 5 1/2 dozen sandwich cookies.
Peppermint Filling: Melt 8 oz. cut up white confection coating in top of
double boiler over hot water. When melted, stir in 2 drops green food
coloring and 1/4 t. peppermint extract. Keep mixture warm over hot water.
(White confection coating is also called white chocolate or summer coating.
It is sold by the lb in cndy stores.)
