Recipe: Ais Krim Gula Melaka Coconut And Palm Sugar Ice Cream

2 cups coconut milk
1 cup cream
100 g palm sugar chopped
2 eggs
2 egg yolks
2 tablespoons caster sugar

Soft brown sugar can be used instead of
palm sugar
Combine the coconut milk, cream and palm sugar in a medium saucepan. Heat
slowly stirring frequently, until hot, do not allow it to boil. Remove from
the heat. Place the whole eggs, egg yolks and caster sugar in a heatproof
bowl, and beat with an electric mixer until thick and frothy. Place the
bowl with the egg mixture over the top of a saucepan of simmering water.
Slowly pour in the cream mixture in a steady stream stirring constantly.
cook stirring constantly until thickened 7-8 minutes. Transfer to a metal
cake tin and leave to cool at room temperature about 30 minutes. Cover the
tin with aluminium foil and freeze until icy around the edges about 1 1/2
hours. Transfer the mixture to a food processor and blend to break up.
Return to the tin, cover and freeze until firm, about 2 - 2 1/2 hours.
Remove the ice cream from the freezer 5 minutes before serving to allow it
to slightly soften.
