Recipe: Apricot Glazed Carrots

32 ounces peeled baby carrots
1/2 cup water
1 Tablespoon butter or margarine
3/4 cup apricot preserves
2 teaspoons lemon juice
In medium saucepan over medium heat, simmer carrots in water until just
tender, about 15-18 minutes; drain. Add butter and cook until melted.
Toss apricot preserves and lemon juice with carrots until heated through.
Garnish with parsley sprig and lemon twist, if desired.
