Recipe: Asian Barbecue Marinade

1 1/4 cups Chinese cooking wine or sherry
3 red chillies seeded and chopped
1 stalk lemongrass -- finely chopped
1/4 cup soy sauce
2 tablespoons lemon juice
1 tablespoon fish sauce
2 star anise
2 tablespoons shredded ginger
Place the cooking wine, chilli, lemongrass, soy, lemon juice, fish sauce,
star anise, and ginger in a saucepan over high heat. Bring to the boil and
remove from the heat. Pour into a sterilised bottle, seal and label.
