Recipe: Baba Ghannouj

3 medium-sized eggplant (shiny and firm
ones only)
2 cloves garlic
salt to taste
3 tablespoons tahina -- (3 to 4)
lemon juice
paprika to garnish (optional)
Place the eggplant under the griller or blacken them directly in the
flames on the top of your stove
Turn them frequently to ensure all the skin burns and the bitter juices
inside start dripping out. Don't stop until each eggplant is black and
charred. Wash them thoroughly to remove the skin and juices.
Pulverise them in a blender with crushed garlic, salt, then gradually add
tahina and lemon juice. Keep tasting until you think it's right. It
should be smooth and firm enough to sit on a piece of spongy pide bread.
Garnish with a little paprika for colour.
