Recipe: Baked Fennel With Goats Cheese And Silver Beet

75 g goats cheese
5 baby fennel trimmed and halved
2 tablespoons thyme sprigs
sea salt & cracked black pepper to taste
2 bunches silver beet -- stem and veins
traimmed
75 g butter
100 g walnuts roughly chopped
Preheat the oven to 180C. Spread the goats cheese thinly over the fennel.
Place in a deep baking tray and sprinkle with the thyme, salt & pepper.
Pour 1 cup of water into the tray and cook for 30-35 minutes or until the
fennel is soaft and the goat's cheese is golden. Place the silver beet in
a large saucepan of boiling water and cook for 1 minute or until the
leaves wilt. Drain. Melt the butter in a saucepan and simmer until light
and golden. Remove from the heat. Add salt, pepper, and the walnuts. To
serve, place the silverbeet on a large plate, spoon over the walnut brown
butter and top with the fennel. Serves 8 - 10.
