Baked Lamb Shanks a' la Tandour (Kuzu Tandir)
Serves 4

1 large onion, coarely chopped
2 carrots, sliced
2 cloves garlic, sliced
3 bay leaves
4 lamb shanks with meat
Freshly ground pepper
1/2 cup boiling water

Preheat oven to 400*.

In the bottom of an ovenproof casserole place the onion, carrots, garlic,
and bayh leaves. Place the lamb on top of the vegetables and stuff a few
slices of the garlic into the lamb, grind some pepper on top. Add the
boiling water, cover the pot with a piece of aluminum foil and then cover
with the lid.

Bake for 30 min., reduce heat to 350*F. amd continue baking for 2 hrs.
Before serving, remove any fat and bones.
