Recipe: Beef In Oyster Sauce

1 tbsp sake
1/2 tsp bicarbonate of soda
1/2 tsp sugar
1 fillet steak cut into thin slices -- (460 g )
2 tbsp oil
1 spring onion chopped
1/2 tsp chopped garlic
1/2 tsp chopped fresh root ginger
1 tbsp green peppercorns
2 tbsp oyster sauce
280 ml beef stock
salt & pepper
1 tsp cornflour -- combined with a
little water
Mix together the sake, bicarbonate of soda and the sugar. Place the sliced meat in the marinade and marinate at room temperature for 1 hour. When the meat is ready to cook, heat the oil in a wok and briefly stir-fry the spring onion, garlic, ginger and peppercorns. Drain the meat, reserving the marinade. Add the drained meat to the wok, stir well and cook for 1 minute. Pour off any excess oil. Pour the marinade over the beef and stir in the oyster sauce and the stock. Season well with salt & pepper. Allow the sauce to reduce slightly. If it is still too thin, add a little of the cornflour, stirring continously until the required consistency is reached.
