Recipe: Beef Kebabs With Italian Rice

500 g rump steak cubed
3 tbs barbecue sauce
12 wooden skewers soaked in water
1 tub plain yoghurt -- (200 g )
1/4 cup chopped fresh parsley

1/4 cup olive oil
1 onion sliced
1 clove garlic crushed
2 flat mushrooms sliced
1 eggplant cubed
1 can chopped tomatoes -- (400 g )
2 cups long grain rice
freshly-ground black pepper
Marinate beef cubes in barbecue sauce in the fridge. Heat oil in frying pan with lid. Add onion, garlic, mushrooms and eggplant. Cook until eggplant is soft. Add tomatoes, rice and enough water to cover. Bring to boil then simmer until rice is cooked, adding more liquid if necessary. Season to taste with pepper. Meanwhile thread meat on to a skewer then grill or barbecue kebabs. Serve kebabs on a bed of vegetable rice topped with yoghurt and parsley.
