Recipe: Beet Ringmold

1 can Shoestring Beets
1 1/2 cup Liquid beet juice -- and water
1/4 cup Sugar -- (scant) or sugar
sub to equial 1/4 cup sugar
1/8 cup Cider Vinegar
1 package sugar free Lemon Jello -- (3 Oz.)
Drain beets and save juice. Add water to juice to make 1 1/2 cups liquid. Put liquid in saucepan with sugar and vinegar. Bring to a boil. Pour over Lemon Jello. Stir until dissolved. Add beets and mold.
