Chicken Casserole
2-3 cups cooked cubed chicken
1 cup celery, chopped finely
1 cup cooked rice
3/4 cup mayonnaise
1 can cream of mushroom soup
3 boiled eggs, diced
1 tsp. lemon juice
1 tsp. salt
1 tsp. chopped onion
TOPPING:
1/4 cup melted margarine
1 cup crumbled cornflake crumbs
1/2 cup grated cheese
Mix chicken, celery, rice, mayonnaise, soup, eggs, lemon juice, salt
and onion. Spread into a greased 13X9 pan. Mix topping ingredients
and sprinkle over top. Bake at 350 for 35 minutes or until heated
through.
