Pizza Rustica
Two prepared pie crusts
8 ounces grated mozzarella
6 eggs
2 tablespoons ricotta cheese
1/4 pound Genoa salami
(not hard salami)
Optional seasonings:
Dash of parsley or Italian seasoning
Pinch of black pepper
In a large bowl, mix together the mozzarella, eggs and ricotta cheese, along with above seasonings if desired. Do not add salt. Pour a ladle of the mixture into the bottom pie crust and layer it with thinly sliced genoa salami. Repeat until all ingredients are used up.
Cover pie with the second crust and brush with a mixture of lightly beaten egg.
Bake at 325 F for 45 to 50 minutes until crust is golden brown.
