RICH AND CREAMY POTATOES

HEAT OVEN TO 400 DEGREES. Pierce each of (6 potatoes), rub with (1 tbs. oil).
Bake potatoes 1 hour. Remove from oven. In bowl, mix (8 oz cream cheese), (1
cup sour cream), (1/4 cup each milk and butter), (1/2 cup chopped parsley), (2
tsp. garlic salt), (1/2 tsp. white pepper), (pinch each of nutmeg and cayenne
pepper). Halve potatoes lengthwise, scoop out flesh, leaving shell. Transfer
flesh to bowl, place shells on baking sheet. Mash potato flesh until smooth.
Stir in cheese mixture. Transfer mixture to plastic bag, snip off corner, pipe
filling into shells. Sprinkle with a (pinch of paprika). Bake 35 min. or until
golden. GARNISH WITH SOME SHREDDED CHEDDAR CHEESE. MAKES 6 SERVINGS.*
