Recipe: R Is For Raisin Apple Muffins

R IS FOR RAISIN-APPLE MUFFINS
1 cup of Cheerios or Apple Cinnamon Cheerios cereal, crushed (about 1/2
cup)
1 1/4 cups all-purpose flour
1/3 cup packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon baking powder
3/4 teaspoon of baking soda
2/3 cup raisins
1/2 cup applesauce
1/3 cup milk
3 tablespoons vegetable oil
1 egg
Heat the oven to 400 degrees. Grease bottoms only of 12 medium muffin cups,
2 1/2 by 1 1/4 inches. Mix cereal, flour, brown sugar, cinnamon, baking
powder, and baking soda in a large bowl. Stir in remaining ingredients just
until dry ingredients are moistened. Divide the batter evenly among the
muffin cups. Bake until golden brown, 18 to 22 minutes. Makes 12 muffins.
