Whiting Mould with Prawn Dressing

6 large whiting fillets
2 egg whites
2 tablespoons white sauce
1 pinch salt and pepper
1 thick cream
1 chopped hard-boiled egg
Remove the bones and skin the fillets.
Combine the whiting and egg whites in a blender or mortar. Add white sauce
and mix well. Pass mixture through a sieve, then add a little thick cream,
and salt and pepper to taste. Mix well.
Fill a well-buttered mould, cover with buttered paper and steam gently for
about 17 or 18 minutes, or until it is set.
Remove from the mould and serve with fluffy white rice and prawn sauce with
a chopped hard-boiled egg added.
