Recipe: Accordian Potatoes

12 medium sized baking potatoes
1/2 cup butter, melted
1 tsp. salt
1/1 cup chopped parsley
4 tsp. dried rosemary
1 cup shredded mozzarella
6 Tbsp. grated parmesan cheese
Cut potatoes into 1/4" thick slices, cutting to but not through other
side. Carefully bend potatoes to separate slices. Place in lightly
greased 13 x 9 x 2" inch baking dish.
Drizzle potatoes evenly with butter and sprinkle with salt, parsley
and rosemary.
Bake at 450° for 1 hour or until done.
Sprinkle with cheeses and bake 5 or 10 minutes more or until cheese
melts.
