Recipe: Dates Stuffed With Almonds And Goat Cheese

Dates stuffed with almonds and goat cheese wrapped in bacon
16 Medjool dates (local dates may be substituted)
4 ounces goat cheese
16 whole roasted almonds
8 slices of bacon, cut in half, about 1 ounce each
Preheat oven to 400 degrees. Split each date lengthwise, slightly
pull open and remove the pit. In the cavity left by the pit, place an
almond and approximately 1/8 th of an ounce of goat cheese. Pinch
each date back together and wrap with the bacon. Place the dates on a
baking pan with the bacon seam side down and bake for about ten
minutes or until the bacon is golden and crisp.
