Recipe: Mexican Strata With Spanish Rice

SERVES 4
Mexican Strata

Ingredients
1 pound lean ground beef, 7% fat
2 tablespoons water
1 (1-ounce) packet taco seasoning mix
cooking spray
5 (10-inch) flour tortillas
3/4 cup shredded Mexican cheese blend, divided
1 cup zesty salsa refried beans
1 1/2 cups shredded lettuce
3/4 cup mild salsa, divided
1/2 cup sour cream
1/4 cup sliced black olives (drained)

Steps

1. Preheat large sauté pan on medium-high 2-3 minutes. Place beef in
sauté pan (wash hands); cover and cook, stirring frequently, 5-7
minutes until beef is brown, breaking up meat as it cooks.
2. Drain meat and return to sauté pan. Stir in water and seasoning
mix; sauté 1-2 minutes.
3. Spray baking dish with cooking spray. Build layers in this order.
1st tortilla: (edges of tortilla may come up side of dish) beef and 2
tablespoons cheese. 2nd tortilla: refried beans and 2 tablespoons
cheese. 3rd tortilla: lettuce, 1/2 salsa and 2 tablespoons cheese. 4th
tortilla: sour cream, olives and 2 tablespoons cheese. 5th tortilla:
(press layers down firmly to settle layers together) then top with
remaining 1/2 salsa and 1/4 cup cheese.
4. Microwave on HIGH 5 minutes. Turn 1/4 turn and microwave 5 more
minutes to heat thoroughly. Let stand 5 minutes. Slice into wedges,
garnish with additional olives, sour cream and lettuce, if desired,
and serve. (Makes 6 servings.)
