Pork Chops with Roasted Peppers & Potatoes
1 Tbs. vegetable oil
4 (3/4") pork chops (about 1 lb.)
3 medium red potatoes, halved and thinly sliced
1 medium onion, sliced
1 tsp. dried oregano leaves
1 can Campbell's Condensed Chicken Broth or 1-1/4 cups Ready to Use
Broth
2 cups diced, roasted red peppers
1/8 tsp. ground black pepper
Heat oil at medium-high in large skillet. Add chops and cook until
browned; set chops aside. Combine potatoes, onion and oregano in
skillet. Stir-fry 5 minutes, stirring often. Add chops, broth, red
peppers and black pepper. Heat to a boil. Simmer covered, over low
heat until chops and vegetables are cooked through, about 10 minutes.
Remove chops and vegetables from seasoned broth and serve broth as an
accompaniment.
