Recipe: A Modern Croque Monsieur Sandwich

* 8 slices wheat-nut bread packaged in 1/8 inch thick slices
* 1 C. grated Swiss cheese
* 3 T. mustard-mayonnaise
* 8 slices turkey-ham cut 1/8 inch thick
* 1 egg
* 1/3 C. milk
* 1 1/2 T. butter
* Combine cheese and mustard-mayo to make a paste.
* Spread paste evenly on one side of each slice of bread.
* Place 2 slices turkey-ham on each of four slices of bread.
* Cover the ham with the remaining bread slices, cheese side down.
* When ready to cook, heat an oven to low, beat egg and milk in
shallow dish and heat butter in a large skillet.
* Dip two sandwiches in the egg mixture, turning to coat both sides.
* Transfer sandwiches to skillet and brown on one side. Turn and
cover skillet until cheese mixture melts and the sandwich is heated
through, 2-3 minutes.
* Uncover the skillet and continue cooking until bottom is browned.
* Place sandwiches in warm oven and repeat cooking process with
remaining 2 sandwiches
