Recipe: Another Carrot Cake

2 cups sugar
4 eggs
1 1/3 cups cooking oil
2 cups flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
4 cups grated carrots
¾ cup chopped nuts
Preheat oven to 350°. Grease and flour 13x9x2" baking pan. Beat the
sugar and eggs until thick. Stir in the oil. Sift together flour,
baking soda, baking powder and cinnamon. Stir this into the egg
mixture. Fold in the carrots and nuts. Put into pan. Bake at 350° for
35-40 minutes. Cool on a rack. Frost with Cream Cheese Frosting 1
below:
CREAM CHEESE FROSTING
1 8 oz. pkg. cream cheese
½ cup butter
1 tsp. vanilla
1 lb. powdered sugar, sifted smooth.
Beat all together until well blended. Frost.
