Recipe: Amish Apple Cake

3 c. plain flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 c. sugar
2 eggs
1 1/4 c. salad oil
5 c. chopped apples
Nuts
2 tsp. vanilla
Sift together twice flour, soda, salt and cinnamon. Beat eggs, sugar,
until creamy. Add oil and vanilla. Beat until smooth. Add sifted
flour mixture to form stiff dough. Stir in apples and nuts. Pour into
greased and floured tube pan. Bake at 350 degrees for 1 hour.
