Recipe: Angel Food Cake With Strawberries

1 cup cake flour
pinch nutmeg
12 egg whites
1 1/2 tsp. cream of tartar
1 1/3 cups superfine sugar
1/4 cup unsweetened cocoa powder
3 cups sliced strawberries
3 tbs. regular sugar
1/4 cup orange juice
Sift together flour and nutmeg into bowl. In another bowl, beat egg whites
and cream of tartar until frothy. Beat in superfine sugar until stiff peaks
form, 7 min. Fold flour mixture into egg whites. Transfer half the batter to bowl.
Fold cocoa powder into half the batter in one bowl. Alternately spoon white
batter the chocolate batter into ungreased tube pan. Swirl with knife to create
marbled texture. Bake in 35O DEGREE OVEN* for 40 min. Remove from oven and
invert on baking sheet. Cool. Combine the strawberries and regular sugar and
orange juice in bowl. Let stand for flavor to mellow. TO SERVE: SLICE CAKE AND
TOP SLICES WITH STRAWBERRY MIXTURE. Makes 10 servings.*
