Recipe: Antipasto Hero

1/3 cup dijon mustard
3 tablespoons vegetable oil
1 tablespoon red wine vinegar
2 cups sliced fresh mushrooms
1 large tomato, seeded and coarsely chopped
1/2 cup sliced celery
1/2 cup sliced radishes
1/2 cup sliced pimento stuffed olives
1/3 cup chopped green pepper
1/3 cup thinly sliced scallions
1/4 cup chopped fresh parsley
1 large clove garlic, crushed
2 tablespoons capers
1/8 teaspoon ground black pepper
Italian bread loaf (about 16 to 18 inches long)
In bowl, combine all ingredients except bread. Cover; chill for
1 hour. Cut bread in half lengthwise. Remove soft insides from
top and bottom halves, leaving a 1/2 inch thick shell. Coarsely
crumble insides; reserve 1 cup crumbs. (Freeze remaining crumbs
for another use. ) mix reserved crumbs into vegetable mixture;
firmly pack mixture into bottom half of bread loaf. Top with
remaining half. Wrap tightly in foil. Chill several hours or
overnight. Slice and serve.
