Recipe: Mushrooms Au Gratin

Mushrooms au Gratin
1/4 cup unsalted butter
4 cups cremin1 mushrooms
1 small clove of garlic, finely chopped
2 tablespoons onion, chopped
1 tablespoon cognac
1 tablespoon flour
2 tablespoons heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup cracklins crushed
Preheat oven to 450F. Slice mushrooms into quarters. Melt butter in
sauce pan with mushrooms. Add shallots. Cover saucepan and cook for 10
minutes over medium heat. Add cognac and cook for 7 minutes. While
oven preheats, combine flour and cream. Pour mixture over mushrooms
and continue to cook, stirring continually, for about 5 minutes more.
Season with salt and pepper and pour into a gratin dish or oven proof
dish. Sprinkle crushed cracklins on top and bake for 15 minutes until
light brown.
Serves 4.
