Recipe: 3 Cheese Pizza

6 cups flour
1 tbsp. salt
1 egg, beaten
2 packages active dry yeast
2 1/3 to 2 2/3 cups warm water
Mix flour and salt; add beaten egg. Add dissolved yeast slowly to
flour mixture. Knead together until mixture becomes sticky and has a
dough consistency. Rub hands with oil and mold dough into a smooth
ball. Place dough in a deep bowl and cover with a towel. Leave in a
warm place to rise. Punch dough down after 1 hour and let rise a
second time ( about 45 minutes). Divide dough in half and press out
each to fit pizza pans (using oiled fingertips).
Generously spread pizza dough with your favorite pizza sauce, within
1/2" from edges. Sprinkle with salt and pepper to taste. Add 1 1/2
lbs. grated Mozzarella cheese, 4-oz. grated Swiss cheese, 1/2 lb.
grated brick cheese (grated over the sauce). Use toppings of your
choice - pepperoni, green pepper, onions, mushrooms, sausage, ham,
ripe olives, etc. Sprinkle with parsley and oregano to taste. Bake at
400 F. 15-20 minutes or until crust is browned, and topping is bubbly.
