Recipe: Baked Banana And Chocolate French Toast

BAKED BANANA AND CHOCOLATE FRENCH TOAST
10 slices egg bread
2 tbsp softened butter or margarine
2 ripe bananas, peeled and sliced
2 oz bittersweet chocolate, coarsely chopped
1 cup milk
3 eggs
2 tbsp sugar
pinch salt
1/2 tsp vanilla
TOPPING:
1 tbsp sugar
1/4 tsp cinnamon
Preheat convection microwave oven bake pad to 425F.
In bowl, gently combine bananas and chocolate; set aside.
Trim crusts from bread. Place five bread slices on work surface; spread
butter evenly over top. Top evenly with banana mixture; top with remaining
bread slices. Cut diagonally into quarters to make triangles.
Arrange triangles, longest side down, overlapping slightly, around edge of
greased 9-inch (23 cm) pie plate. Whisk together milk, eggs, sugar, salt and
vanilla until well blended. Pour milk mixture evenly over triangles. Let
stand at room temperature for 30 minutes. Combine sugar with cinnamon;
sprinkle evenly over top.
Bake uncovered, in preheated microwave for 30 minutes or until bread is
puffed, top is golden brown and chocolate has melted. Let stand for 5
minutes before serving.
