Recipe: American Tomato Salad

* 1 red bell pepper
* 1/4 C. sherry vinegar
* 1 C. olive oil, divided
* 3 large tomatoes
* salt and pepper
* 4 thick slices bacon, cut into 1/2 inch pieces
* 2 shallots sliced thin
* 2 heads Boston Lettuce

Roast red bell pepper until blackened. Put in plastic zip bag to steam
for 15 minutes, then remove skin. Roughly chop, then puree in blender
with sherry vinegar and olive oil. Begin with a small amount of oil
and vinegar and blend thoroughly. This should be a pepper puree that
tastes like a vinaigrette. Set aside

Slice tomatoes and season with salt and pepper. Heat a skillet and
sauté tomatoes in 3 T. olive oil until golden on each side. Add bacon
and cook for 3.4 minutes. Add shallots and cook for another minute

Turn tomatoes bacon and shallots onto a platter and set aside

Using crispy inner leaves of lettuce, make a nice bed of lettuce
leaves on 4 salad plates. Arrange still warm tomatoes, bacon and
shallots on lettuce. Dress with pepper vinaigrette. Add any favorite
herbs you may have from the garden.
