Recipe: Foil Packet Dinners

Ground meat - make patties about 6 to 8 ounces each
Sliced or diced potatoes, carrots and onions
1 can green beans, drained
Green or red bell pepper rings (if desired)
Salt, pepper and a touch of garlic powder
1 large pat of butter for each packet
Tear off a piece of heavy duty foil large enough to make packets for the
meat and vegetables. If you are going to grill on a campfire, double the
foil. Spray with Pam and place ground meat patty on foil, season, then begin
stacking potatoes, carrots, green beans, onion slices and bell peppers on
meat. Put a large pat of butter or margarine on top, sprinkle lightly with
garlic powder or seasoning salt. Fold foil to make a tight packet so none of
the juices will leak out while cooking. Place in hot coals on top of grill
or in oven at 400 degrees, and cook for approximately 45 to 50 minutes.
Carefully open one packet to make sure it is done. Make one foil packet for
each person. When done, the dinners can be eaten directly out of the foil
and voila, no dishes to wash. You have your meat, vegetables, and with the
addition of a serving of fresh fruit, you have your whole meal. Chicken
breasts can be substituted for ground meat and the cooking time will be
about the same.
