Recipe: Alentejo Pork

1 lb. pork
1 lb. Mussels (well washed)
2 large onions, chopped
2 large tomatoes, peeled and chopped
1 bay leaf
Paprika, salt and pepper
Olive oil
Lard
Cut the pork, which should be very tender, into small pieces and saute
in lard until they are nearly cooked. Meanwhile, heat a tablespoon of
olive oil in a pan and in it cook the onions and tomatoes, bay leaf, a
little salt and pepper and paprika.
When these are well browned, add the Mussels in their shells part
cooked in boiling water. Add the pieces of fried pork and cook all
together for a few minutes. Remove bay leaf before serving.
