Recipe: Caramelized Pineapple Upside Down Cake

1/2 cup butter
3/4 cup brown sugar
1 can pineapple slices, drained (20 oz)
1/4 cup chopped macadamia nuts or almonds
1 pkg. yellow cake mix (1 1/4 lb.)
1/4 cup oil
3 eggs
Heat oven to 350. In a small pan, melt butter over medium heat. Let
butter
simmer until it begins to darken, but does not burn, about 6
minutes.
Add brown
sugar and simmer 3 more minutes. Pour batter mixture into a 13 x 9"
baking
dish. Arrange a single layer of pineapple rings over butter and
sprinkle with
nuts. Prepare cake batter according to package instructions and pour
over
pineapple rings. Bake 30 to 40 minutes or until a toothpick inserted
in
the center
comes out clean. Cool on a rack for 10 minutes. turn out onto a
serving
platter.
Serve at room temperature. Serves 12
