Recipe: Apple Couscous Pudding

2 1/2 c Unsweetened apple juice
2/3 c Couscous
1/4 c Golden raisins
1/2 ts Apple pie spice
2 Cooking apples
2 tb Sugar
Low-fat plain yogurt; to
-serve (optional)
Preheat the oven to 400 F. Bring to boil the apple juice, couscous, golden
raisins and spice in a pan, stirring. Lower heat, cover and simmer.
Spoon half the couscous mixture into a 5-cup ovenproof dish. Peel, core and
slice the apples and arrange half the slices over the couscous. Top with
the remaining couscous.
Arrange the remaining apple slices over the top and sprinkle with sugar.
Bake for 30 minutes, or until golden brown. Serve while still hot, with
low-fat yogurt.
NOTES : Yield: 4 Servings
