Recipe: Loubieh Bziet (Green Beans With Onions)

1/4 cup olive oil
4 large onions
-- cut in half and s=EDlced 1/8- in. thick
2 lbs green beans -- ends trimmed
Salt
freshly ground biack pepper to taste
In a large frying pan, heat the olive oil over medium heat.
When the oil is hot, add the onions. Saut=82 for a few minutes, until the
onions turn translucent. Reduce the heat to low and cook the onions for 20
to 25 min., stirring occasionally. The onions should turn a rich caramel
color.
Rinse the beans in a colander; you want just a small amount of water to cli
ng to them. Add the beans to the onions, stir, and cover the pan. Keep th
e heat low and cook for about 45 min., stirring occasionally. These beans
are not served al dente; they should duil in color and become limp. Season
with salt and pepper and serve hot or at room temperature.
