Brownie Pots
1/2 cup all-purpose flour
1 teaspoon baking powder
6 tablespoons sugar
1/8 cup cocoa -- divided
1 tablespoon cocoa
1/2 teaspoon salt
1/4 cup skim milk
1/2 teaspoon vanilla extract
1 tablespoon melted butter
6 tablespoons brown sugar
Heat oven to 350 degrees F. Combine flour, baking powder, sugar, 1 tablespoon cocoa and salt. Stir in milk, vanilla and butter. Pour 1/4 cup mixture into each of four 4 oz. greased ramekins. Combine brown sugar and rest of cocoa; sprinkle on tops. Pour 3 tablespoons boiling water in a stream on tops. Bake 18 minutes; cool on rack.
