Recipe: Meatless Chili Pots Con Queso

Serves 4


1 large green bell pepper, seeded and finely chopped
1 large onion, finely chopped
2 large garlic cloves, minced
2 cans (15 ounces each) red kidney beans, drained and rinsed
1 can (28 ounces) no-salt-added crushed tomatoes in puree
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
3/4 cup shredded low-sodium, low-fat cheddar cheese

1 Lightly coat large nonstick skillet with nonstick cooking spray and set
over medium-high heat. Saute green pepper, onion, and garlic until onion is
browned, about 5 minutes. Stir in beans, tomatoes and puree, chili powder,
black pepper, cumin, and ground cinnamon. Simmer 5 minutes.

2 Preheat broiler. Line broiler pan with foil. Divide chili among four 2-cup
broilerproof bowls and set bowls on broiler pan. Mound 2 tablespoons cheese
in center of each bowl.3 Broil 6 inches from heat until cheese melts, about
1 minute (watch closely!).
